酒糟毛豆(marinated green soybean)的做法步驟圖

用料  

糟滷pickle sauce 1/3瓶 1/3 bottle
毛豆fresh soybean 斤/500g
八角star anise 2顆/2pieces
桂皮cinnamon stick 一小塊/one small piece
食用油Oil few Drips
鹽salt 1克

酒糟毛豆(marinated green soybean)的做法  

  1. 先洗淨毛豆,用剪刀✂️剪去毛豆的兩邊,這樣做的目的是容易吸收酒糟更入味。
    Clean the soybean, use scissors to cut every single two ends.

  2. 水中加入鹽、幾滴食用油、桂皮和八角燒開,然後放入毛豆,不需加鍋蓋。
    Put the salt and cinnamon stick ,star anise into water . When it’s boiling then put soybean with open lid.

  3. 開蓋煮約十分鐘(不超過十分鐘),瀝乾水,浸入冰水或冷水使其冷卻。再次瀝乾水倒入無水乾淨的玻璃器皿中,加入酒糟滷浸泡至少兩小時。時間越長越入味。間中可以把容器翻個個,這樣做確保每顆毛豆都接觸到酒糟更入味。
    Boiling less than 10 minutes, rinse the soybean and then soak in iced water. Rinse again and put them  into Tupperware. Pour down the pickle sauce for 2 hours at least.

  4. 放入冰箱冷藏後風味會更好。
    keep it in the refrigerator. Put the Tupperware up and down during marination. It will make a better flavoured.
