看到wholefood有卖sprouted wheat wrap深受启发 做发芽小麦吐司失败了 做饼应该没有问题吧 仔细研究了下包装袋上的ingredient 捯饬出来的菜谱 味道一样样 好吃!
用料
hard white wheat | 120g |
rye | 120g |
spelt | 120g |
quinoa | 80g |
vital wheat gluten | 10g |
honey | 25g |
salt | 4g |
home milled whole wheat flour | 45g |
sourdough starter | 20g |
olive oil | 9g |
sprouted wheat wrap的做法
Day 1
hard white wheat, rye, spelt berries soak in water overnight
Day 2
wash, and drain all the water next day, repeat twice a day
quinoa soak in water for 2hr, drain the waterDay 3
1. Use food grinder, smallest setting, grind all the sprouted berries
2. Add the rest of ingredients, form a dough. The dough would be very sticky. It is fine. Use tools to kneed the dough.
3. Rest 15min.
4. Split into several 50g balls.
5. Roll into thin round wrap, use enough flour to avoid sticking
6. Heat the pan in medium heat. Use BRUSH to clean the access flour. Flit the wrap evey couple seconds.调整面粉的用量 形成团 面团没有面筋也没有关系 擀饼不需要太好的面筋 sprouted wheat dough也不会有太多面筋
小贴士
1. sourdough starter只是为了增加风味
2. 全麦面粉的量需要看情况加
3. 整个面团是很粘(sprouted wheat的面团就会很粘) 所以用工具揉面/混合就好
